Abstract | Trapa acornis Nakano is an endemic economical plant in China. The fruit size is medium, product rate of the fresh of fruit reachs 57%; per 100 g flesh of fruit contains H2O 76. 54 g, starch 14. 46 g, raw protein 5. 23 g, fat 0. 04 g; 18 amino acids with total content of 3. 55 ~ 3. 67 g in which are 8 essential amino acids. Plentiful vitamin B (including VB1, VB2, VB5 and VB6), Vitamin E and Vitamin A is also present. The whole flour and starch of fruit contain abundent macroelement and trace element, Ca and Fe in starch is much more than those in flour. In short, the fruit of Trapa acornis is a fine food for health care and is worth further to exploit and utilize |
