T he results of comparison on 7 extraction methods of leaf protein (LP)showed that heat coagulation after acidification is a better method. Fresh leaves were washed and then tho roughly crushed for 3 min (the ratio of plants to water is 1∶3).The filtrate was heated to 95 ℃for 5 min after acidification (pH 4) and then centrifugalized (4 000 r min)for 10 min.The yield of LP, protein content in LP and ex traction rate of protein were the highest .
