薇菜干的营养品质分析

Abstract

The results showed that dried young frond of Osmunda japonica Thunb. is abundant in protein, amino acid, fibre, carbohydrate, calorie as well as K, Si. Mg, P, Fe, Zn, etc. The protein content is 13. 96 % and higher than jew's-ear. The total content (4438. 37 mg/100g) of amino acids necessary for human body approaches to those of veiled lady or bearded tooth.
