野生植物灰叶堇菜的营养成分分析

Abstract

Nutritional components in Viola delavayi Franch. were determined. Seventeen kinds of animo acid were analyzed. The results showed that there are mineral elements, fiber, protein, fatty, sugar and vitamins including β-carotene in V. delavayi. The amount of total sugar is 43.30%, VB2)) 8.07 μg·g-1, Glu 1.87 mg·g-1 and Potassium 178.21 μg·g-1. These results provided the basic data for the utilization of V. delavayi.
